Cashew Nuts:

Cashew, originated in Amazon and spread by Portuguese, is typically grown in tropical conditions. It is cultivated in Brazil, India, Vietnam and African countries on a large scale. Cashew nut is the edible kernel found inside the hard outer shell, attached to the bottom of the cashew apple. The outer shell comprises a toxic substance causing skin irritation. So, in processing units, cashew is exposed to high flame to remove the toxic substance. Then the hard shell is removed to extract kernels. Kernels are kidney or bean-shaped, consists of two halves attached by a plumule.

Cashew Grades:

Cashew nuts are graded into many varieties based on several factors. The kernels are classified into Wholes, Butts, Splits, Pieces and Baby bits as per the shape and size. Wholes are full kernels, Butts are broken cross-wise and halves are attached, Splits are separated lengthwise, Pieces are kernels are broken cross-wise and halves detached, Baby bits consists of plumules and tiny pieces of kernels. Cashew nuts are sorted into White, Scorched, Desert in accordance with their exposure level to heat flames during roasting or drying process. White kernels are normally white/pale ivory in color, Scorched kernels are slightly brown and Desert kernels are deeply brown or black spotted. Whole kernels are graded as 180,210, 240, 320, 450, 500 based on the number of nuts in each pound (lbs).

Black Pepper:

Pepper, known as the ‘King of Spices’, is largely exported from India. The pepper plant, generally grown in hot humid conditions, bears fruit in the form of clustered berries. These fruits are called peppercorns, which are ground to get the pepper. Half-ripe green berries are cooked in hot water, then dried for several days. Heat treatment of berries causes the skin of drupe to shrink and darken, forming the wrinkled black layer over the seed.

Pepper Grades

India, the largest producer of pepper has two distinct varieties of black pepper – Malabar garbled and Tellicherry garbled. Malabar garbled pepper, cultivated along Malabar coast comes in two grades: MG-1, MG-2. Difference between the grades is the percentage of light berries found in a package. MG-1 will have a max of 2% light berries, while MG-2 will have 5% of light berries. Tellicherry garbled, grown in Thalassery town in Kannur district has two grades namely Tellicherry Garbled Special Extra Bold and Tellicherry Garbled Extra Bold. TSGEB has pepper size 4.75mm in diameter and TSEB has pepper size 4.25mm in diameter.
